Beets, Feta, and Herbs!
Great way to turn reluctant beet eaters into beet lovers! The sweet, earthy flavor of beets combined with the creamy, salty feta make a perfect match. Sprinkled with olive oil, fresh lemon juice, a touch of Dijon and a handful of fresh herbs… simply the best!
The “Meaty” Meatless Burger
Start with layers of oven roasted eggplant, a portobello mushroom, and melted cheese. Next, place on a bed of lettuce, top with grilled onions, sweet red pepper, and sunflower spouts. Add to it a dollop or two of vegan/pesto mayo and serve on a wholegrain bun and, just like that, you have a delicious and satisfying “meaty” meatless burger!
Mexican Potato-Corn Chowder
Rich, hearty, and satisfying even before you add the cream! This chowder starts out using an array of vegetables and spice for its base. Add to it new potatoes, sweet corn, roasted chilies, and a touch of cream and you have a chowder that’s full of flavor and comfort. Adapted and inspired from a chowder that was created and served at a downtown Portland, Oregon, delicatessen where I once worked. My buttermilk cornbread recipe also makes a great accompaniment to this chowder.
