Oatmeal Fruit Nut Crumble

Scrumptious! Might not be the first word that comes to mind when thinking about your morning bowl of oats, but it comes close to describing my latest breakfast inspiration. I almost forget that I’m eating a healthy breakfast and not a dessert, as it’s just that good! Whole oats mixed with apples, bananas, and berries and baked with a nut crumble make these a nutritious and delicious morning treat. Serve hot out of the oven, or bake ahead and reheat in the microwave for a quick and easy to-go meal. They also make a great addition to a weekend brunch. Serve with or without a touch of milk or cream. Hope you enjoy!

Ingredients / Makes 4 servings

1 large apple, peeled and diced

1 cup berries, frozen or fresh

1 ripe banana, mashed

1 cup whole old fashioned oats

2 teaspoons flax meal

2 teaspoons chia seeds

1 tablespoon brown sugar

1/3 cup walnuts, chopped fine

1/3 cup dried fruit (raisins or chopped dates work well)

1/2 teaspoon cinnamon

1/2 teaspoon vanilla extract

1 1/4 cup soymilk or other alternative

Directions / Pre-heat oven to 375 degrees

Step 1) Combine all ingredients in medium mixing bowl and stir well to coat with milk.

Step 2) Let mixture sit for 10 minutes or cover and refrigerate over night.

Step 3) While mixture sits, grease 4 ramekins and place on parchment or foil lined baking sheet.

Step 4) Divide and fill ramekins with oat mixture and top with a spoonful of nut crumble (recipe below). Carefully place in oven and bake in a 375 degree pre-heated oven for 25-30 minutes. Serve warm or at room temperature. A squirt or dollop of whip cream is a nice touch, but not necessary.

Crumble Topping / Makes enough for several batches

Directions

Place and mix all the following ingredients in food processor until mixture appears coarsely/fine and crumbling. Store leftover topping in refrigerator in a sealed container for next time.

1 cup all purpose flour or a mixture of white and whole wheat

1/4 cup white sugar

1/3 cup golden brown sugar

1/2 cup walnut halves

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup (1 cube) cold butter, cut in pieces (or vegan butter)
