Yummy, crunching, fruit, nut, and seed granola! The perfect blend of healthy fats, protein, and carbohydrates for a nutritious power packed breakfast or snack. It’s also a great idea to bag up and give as a gift anytime of the year!
Ingredients
6-7 cups organic oats
1/3 cup whole flax seeds (I use golden flax)
1/3 cup raw sesame seeds
1/2 cup raw pumpkin seeds
1/2 cup raw sunflower seeds
1/2 cup uncooked millet
1/2 teaspoon sea salt
2 1/2-3 cups chopped mixed nuts of choice (walnuts, almonds, cashews)
3 cups mixed dried fruits of choice (chopped apricots, mango, raisins, cranberries, cherries, etc.)
1 cup dried unsweetened flaked coconut
1/2 cup olive oil
1/3 cup honey
1/3 cup maple syrup
1/3 cup brown sugar
1/4 cup tahini
1 teaspoon vanilla
1/2 teaspoon cinnamon
Method
Step 1) Pre-heat oven to 300 degrees. Then using an extra large mixing bowl add all the dry ingredients except the chopped fruit and coconut.
Step 2) Mixed together oil, honey, syrup, sugar, tahini, and spices and pour over oat mixture and stir/fold until well combined and coated
Step 3) Spread granola out onto two large parchment lined rimmed baking sheets and bake at 300 degrees for 20-25 minutes. Remove from the oven and stir, then place back in oven for another 20-25 minutes. Add the fruit and coconut during the last 5-10 minutes of baking time. Take out and let cool on tray. Oven temp can vary and it may need to bake longer, just keep an eye out for burning. I use a convection oven and therefore am able to bake both sheets at the same time, but even still I rotate the sheets to make sure they are baking evenly. I don’t recommend baking both sheets at the same time if using a traditional oven. Store in jar, tin, or storage bag to keep fresh.
Notes
I like to drizzle a few extra tablespoons of honey across the top of the oat mixture when I add the fruit and coconut. If left undisturbed when cooling the honey will help form oat clusters, which I love. Also, this is a large recipe so you may want to only make half a batch! I encourage you to experiment with different combinations of fruits, nuts, spices, etc to find what is your favorite. You can also play around with the amount of oil and sugars that you want to use. If you are missing an ingredient you are pretty safe to just omit and/or substitute… unless it’s the oats!
