Great way to turn reluctant beet eaters into beet lovers! The sweet, earthy flavor of beets combined with the creamy, salty feta make a perfect match. Sprinkled with olive oil, fresh lemon juice, a touch of Dijon and a handful of fresh herbs… simply the best!
Ingredients / Serves 4-5
4-6 assorted beets, cooked and chilled
1-2 ounces feta cheese, crumbled
1/2 cup or a handful of chopped fresh herbs (parsley, cilantro, basil)
Dressing
1 clove garlic, finely chopped
1/4 cup olive oil
Juice of 1 lemon
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions
Sliced and arrange beets on platter, sprinkle with feta and herbs, and drizzle with dressing. Serve at room temperature or chilled.
