Did I mention colors excite me! And, this salad does just that as it contains all the shades of the rainbow, or close to it. It’s a fun and easy one to make and adds so much color, texture, and crunch to your palette and plate. Great served as a side salad, or in wraps, on burgers, in sandwiches, or stuffed in your favorite burritos or tacos.
Ingredients / Serves 4-6
2 cups green cabbage, thinly sliced
2 cups purple cabbage, thinly sliced
1 cup carrots, grated
1/2 each red and yellow sweet pepper, thinly sliced,
1/2 cup green onion, chopped
1/2 red onion, thinly sliced
1/2 cup cilantro or parsley, chopped
1 clove garlic, minced
1/4 cup fresh lemon juice
1/4 cup olive oil
1/4 red wine vinegar
1/2 teaspoon each salt and pepper (more to taste)
A pinch of granulated sugar (optional)
Instruction / Method
Step 1) In a large mixing bowl combine the first 7 ingredients.
Step 2) Whisk together garlic, lemon juice, olive oil, vinegar, and salt/pepper.
Step 3) 15- 30 minutes before serving pour dressing over salad and toss until well coated. Cover and set aside, tossing once or twice.
