Fresh, sweet, tart and tangy! I find I crave citrus in the winter and this juicy fruit salad is just the fix. Served on a bed of mix greens with a citrus honey dijon poppy seed dressing, this salad is loaded with immune boosting antioxidants along with a touch of sunshine. It’s one of my very favorite winter salads!
Ingredients / Serves 2-3
Dressing
1/4 cup olive olive
1/4 cup orange, lime, or lemon juice
3 teaspoons honey
2 teaspoons dijon mustard
1 teaspoon poppy seed (optional)
Salad
2-3 cups fresh mixed greens
1 pink grapefruit, large
2 ripe mangos
2-3 mandarin oranges (or tangerines)
1 pomegranate, seeded
1/2 red onion, thinly sliced
1/2 cup chopped dried dates or raisins
1/2 cup almonds, sliced
Instructions
Step 1) Mix up dressing and set aside. Place mixed greens either in a large bowl or divide greens into 2-3 individual serving bowls or plates.
Step 2) Peel grapefruit, slice in half and then slice each half into 8 sections. Feel free to remove the pith and skin surrounding each segment of the fruit after removing rind, but keep in mind you are throwing away fiber and immune boosting flavonoids in the process. Arrange slices on top of greens.
Step 3) Peel and slice mango into preferred pieces or slices and place next on salad.
Step 4) Peel and separate mandarin segments and place on salad.
Step 5) Thinly slice onion and place on salad.
Step 6) Seed pomegranate if you haven’t done so already. I’m not an expert at this, but I place wax paper on top of cutting board for easier clean up. I then slice off top and cut down the center and then into thirds or quarters to release the seeds. It’s a bit of a tedious and messy process. Be careful to remove any of the bitter pith that falls into collected seeds.
Step 7) Lastly, top salad with pomegranate seeds, chopped dates, and nuts. Just before serving add desired amount of dressing.
