5 Minute Hummus

If you have the ingredients on hand this hummus recipe really only takes minutes to make! In the past, for the sake of convenience and time, I’ve often purchased tubs of store bought hummus. And, more often than not, it would end up in the garbage only half eaten. Well, not anymore. Now, instead of soaking beans overnight (which takes some planning), I just toss a can of beans and a handful of other ingredients into the the food processor and give it a whiz. Presto! Ingredients / Serves 4-6

2-3 cloves garlic, peeled

1 can (15 ounce) garbanzos (chickpeas), drained

1/4 cup tahini

1 teaspoon smoked paprika

1 teaspoon cumin, ground

1 teaspoon salt

Juice of one lemon (1-2 tablespoons)

1 tablespoon olive oil

1/4-1/3 cup ice water

Method

Step 1) Place garlic in food processor and mince well.
Step 2) Add all the other remaining ingredients except the water and pulse several times until blended, scraping down the sides with spatula if needed.
Step 3) Add cold water slowly through tube blending well until desired consistency is reached.

Serve plain with a drizzle of olive oil or with your favorite toppings such as olive, peppers, tomatoes, or feta.
